Gelling Agent

Agar-Agar is a thickening agent used in culture media for microorganisms and plant tissue and for the food industry. It consists of approximately 70 percent agarose, the substance responsible for gelling, and 30 percent agaropectin, a non gelling polysaccharide. Agar-agar is extracted from the cell walls of various Asian seaweeds.
